Watermelon is the quintessential summer fruit. As it’s name suggests it's full of water, one of our most important nutrients, however it also contains many electrolytes which help to keep us properly hydrated. Slices of watermelon alone are a great snack however I added some kefir (fermented milk, similar to yoghurt) in this recipe to add some protein and fat and make it a more substantial snack. Plus the sweetness of the melon and the slight sourness of the kefir are a perfect match.
-¼ of a whole watermelon, sliced into triangles
-1 cup kefir (buy kefir's with no added sugars, flavours or preservatives).
-Toppings such as chopped berries, mint leaves, dried rose petals, shredded coconut, etc.
1) Line a baking tray with non-stick paper.
2) Using a small paring knife slice a small slit into the pith at the base of you watermelon slices. Insert ice-block sticks (I used plastic reusable ones) into the slit on each slice.
3) Dip the pointy end of each watermelon slice into the cup of kefir before placing on the lined baking tray. Sprinkle your toppings over each slice.
4) Place the tray into the freezer for at least half an hour and serve straight from the freezer.
