This jam is significantly lower in sugar than standard jam. Plus the chia adds protein, omega 3 fats and micronutrients. The shelf life isn’t as long as standard jam however it is much quicker to make. Use it to spread on toast, in sandwiches, trifles, jam drop cookies or tarts.
1 punnet of strawberries, washed
1 tablespoon raw honey
2 sprigs of fresh thyme or ¼ t dried thyme
¼ cup chia seeds
1) Place strawberries, honey & thyme in a small saucepan over medium heat.
2) Cook for a minute before turning the heat down to low and slowly simmer for another 5-8 minutes.
3) Turn the heat off and mix in the chia seeds. Spoon into a jar and allow to sit and thicken for at least 1 hour. Store in the fridge and use within a week.
