GF, DF, Paleo Serves: 10 Skill level: Easy These cookies are easy, nutritious and delicious! They're high in protein because they are based on nut butter. Choose a good peanut butter, one containing nothing other than peanuts, or use another nut butter such as almond butter if you prefer. You can also use any chocolate that you want, vegan chocolate, paleo or ketogenic chocolate. Or ditch the chocolate and add some dried fruit like raisins or some nuts. The variations possible with this recipe are endless so feel free to get creative. Ingredients 1 egg 1 cup crunchy peanut butter 1/3 cup coconut sugar 1/3 cup chocolate chips or chunks of choice 1 teaspoon vanilla extract Method 1) Preheat oven to 200°C. Line a baking tray with baking paper. 2) Place all ingredients in a bowl and mix vigorously until well combined. 3) Take tablespoons of the dough and roll into balls. Place the balls on the lined tray leaving a few centimetres in between for the cookies to expand. Once all the dough has been rolled into balls lightly press down on the middle of the balls with a fork so slightly flatten them. This will help them to cook through evenly. 4) Place in the oven for 10 minutes. After this take them out and allow them to cool for 10 minutes, they will firm up in this time and be ready to eat immediately. Once totally cooled store them in an airtight container for up to 5 days or freeze them for up to a month.
